Hilary's Cassoulet - A Super Bowl Party Hit
As promised Hilary's Cassoulet Recipe
2 1/2 tblspn olive oil.
1/3 cup minced shallots.
2 cloves garlic, minced or pressed.
1 carrot (about 4 oz). peeled and diced.
2 cans (15 oz each) small white beans, drained and rinsed.
1 cup 1 inch raw chicken chunks.
2 chicken breasts sliced cross wise 1/4 inch thick.
1 smoked sausage sliced cross wise 1/4 inch thick.
1 can tomatoes, diced.
1 teaspoon herbes de provence.
2 dried whole bay leaves.
2 cups chicken broth.
1/2 teaspoon salt.
1/4 teaspoon pepper.
In a pan saute the shallots, garlic and carrot, until tender (about 7 minutes).
In a crock pot combine the sauted items with the other ingredients. Cook on low for 6 to 8 hours (until chicken is done).
Makes 4 to 6 servings.
